Broccoli Cheddar Soup Recipe

Recipe Ingredients for Broccoli Cheddar Soup

1 tablespoon Olive Oil
1 cup chopped yellow onions
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch nutmeg
1/2 teaspoon garlic, minced
1/2 teaspoon fresh thyme
1 cup canned white beans
3 cups low sodium vegetable broth
1 pound broccoli
1 1/4 cups shredded cheddar cheese

Recipe Directions for Broccoli Cheddar Soup

Heat olive oil over medium heat in large pan. Saute onions until soft and golden. Season with salt, pepper and nutmeg. add garlic and thyme and stir until fragrant, one minute. Add white beans, broth and broccoli. Bring to a boil, reduce heat and simmer until broccoli is tender, about 10 minutes. Remove from heat and blend until smooth with an immersion (hand) blender. Slowly stir in the cheese and serve hot.
