Recipe Ingredients for Broccoli Cheddar Soup - Cook?s Illustrated

2 bunch Broccoli
2 tbsp Unsalted Butter
1 medium (2-1/2" dia) Onions
2 clove Garlic
1.5 Teaspoon Mustard
1/4 tsp Cayenne
0.25 teaspoon Baking Soda
16 fl oz Organic Free Range Chicken Broth

Recipe Directions for Broccoli Cheddar Soup - Cook?s Illustrated

  1. Heat butter in a large Dutch oven over medium-high heat. When foaming subsides, add broccoli, onion, garlic, dry mustard, cayenne, and 1 teaspoon salt. Cook, stirring frequently, until fragrant, about 6 minutes. Add 1 cup of water and baking soad. Bring to a simmer, cover, and cook until broccoli is very soft, about 20 minutes, stirring once during cooking.

  2. Add broth and 2 cups of water and increase heat to medium-high. Add cheddar. Use hand blender and process until smooth. Adjust consistency of the soup with up to 1 cup of water. Season to taste with salt and pepper.
