Delicious and healthy! This makes a great breakfast, lunch or dinner. The little bit of full-flavored cheese broiled on top adds a great punch to the overall taste.

Recipe Ingredients for Broccoli and Cheddar Frittata

4 whole eggs
4 egg whites
2 T water
2 tsp olive oil
135 grams (1 small) red onion, thinly sliced
10 1/2 oz broccoli, steamed and chopped
1/4 tsp salt
1 black pepper, freshly ground to taste
3 oz. extra sharp cheddar cheese, grated

Recipe Directions for Broccoli and Cheddar Frittata

  1. Preheat your broiler.

  2. Whisk together whole eggs, egg whites and water.

  3. In a medium (10 inch) ovenproof nonstick skillet, heat the oil over medium heat. Add the onion and cook until it begins to soften, about 5 minutes.

  4. Add broccoli, season with salt and pepper and cook for another 2 minutes.

  5. Pour the egg mixture over the vegetables in the skillet covering them evenly. REduce the heat to medium-low, cover and let cook until the egg mixture has set around the edges but is somewhat loose or liquid in the middle, about 8 minutes.

  6. Remove cover, sprinkle with cheese. Place the skillet under the broiler about 2 inches from the heat until the surface of the egg mixture is set and golden brown, about 1 to 2 minutes. Be careful not to overcook or the egg mixture will become tough.

  7. Cut into 4 wedges and serve.
