Twice baked potatoes with broccoli, cheddar cheese, and bacon crumbles

Recipe Ingredients for Broccoli cheddar bacon twice-baked potatoes

2 large russet potatoes
1 cup broccoli
3/10 oz bacon
3/4 cup Cheese
1 serving Extra Virgin Olive Oil
1 tbsp butter without salt
1/4 cup Light Sour Cream

Recipe Directions for Broccoli cheddar bacon twice-baked potatoes

  1. Run potato skins with olive oil and bake in oven at 350 degrees until tender, over 1 hr.

  2. While this is cooking, fry up four strips of bacon.

  3. Scoop out most of flesh, combine with chopped broccoli, cheddar cheese, butter, sour cream, and bacon. Scoop back into potatoes, place back on rack, bake until cheese is melty.
