Recipe Ingredients for Broccoli, Cauliflower, Squash, & Bean Soup

1 tbsp olive oil
1 cup onion, diced
2 cups broccoli
2 cups cauliflower
15 oz cannellini beans
1 cup squash, cubed
1 cup pumpkin
4 cans chicken broth
1 salt
1 pepper

Recipe Directions for Broccoli, Cauliflower, Squash, & Bean Soup

Sautee the onions until translucent. Add the other veggies and sautee for two minutes. Add the broth and cook until the veggies are tender. Puree in batches in a blender or food processor. Add salt and pepper to taste.
