Recipe Ingredients for Broccoli, Cauliflower, Spinach Cheeze Soup

1 cup broccoli florets
2 cups cauliflower florets
1 cup nutritional yeast
1 teaspoon pepper
1 teaspoon salt
1/2 cup vegetable broth
3 cups water
1/3 cup yellow onion
1 garlic clove
1/2 cup rolled oats
1 cup spinach
1 tablespoon grapeseed oil

Recipe Directions for Broccoli, Cauliflower, Spinach Cheeze Soup

  1. Heat oil in pan. Saute onion for 5 minutes or until slightly brown. Add garlic and saute for another 2 minutes.

  2. Add broccoli and cauliflower. Cover and steam for 2-3 minutes. Add spinach and cover again until spinach is wilted.

  3. Once the spinach is wilted add vegetable broth, rolled oats, water, salt, pepper. Bring to a boil and reduce. Let simmer for 10 minutes or until broccoli and cauliflower are soft.

  4. Puree soup until smooth. Add nutritional yeast. Puree again. Serve hot.
