Low Fat vegetable soup - very good!! Easy to make!! try it with other vegetables.

Recipe Ingredients for Broccoli Cauliflower Soup w/yoghurt

1 cup potato, diced
2 cups cauliflower, diced
2 1/2 cups broccoli, diced
4 cups chicken broth
2 tsp. salt
1 tsp. pepper
1 cup yoghurt, plain

Recipe Directions for Broccoli Cauliflower Soup w/yoghurt

  1. Place diced vegetables in a saucepan and cover with broth, bring to a simmer till vegetables are tender and puree in a blender or in the pot with a stick blender. Add salt and pepper to taste.

  2. 1 Cup of lowfat milk can be added for creamyness, or sour cream, or yoghurt.
