Recipe Ingredients for Broccoli & cauliflower Salad

1 bunch(608 g) Broccoli
1 head, large (6-7" dia) Cauliflower
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium raw Onion Red
50 olives Ripe Olives
8 serving Walnut Oil
4 serving Balsamic Vinegar
2 oz Lemon Juice
2 oz Classic Dijon Mustard
4 serving Salt Substitute
1 tsp Pepper, Black

Recipe Directions for Broccoli & cauliflower Salad

  1. cut into bite size and slightly larger pieces broccoli (florets and stalks) and cauliflower.

  2. Very lightly steam broccoli and cauliflower, 2-3 minutes max. You want them still crunchy but able to take on the vinagrette.

  3. Use sink of cold iced water to stop cooking.

  4. Remove stem seeds and membrane from red pepper. Then chop into bite size slivers,

  5. Slice red onion into slivers about 2" long.

  6. Drain can ripe olives very well. These can be left whole or cut in halves.

  7. Make dressing from remaining ingredients and add walnut oil at end by whisking into other ingredients in a slow steady stream to keep mixture from separating.

  8. Place in good storage container. Will keep in fridge for 1 week.
