Eggs and veggies mixed together for a low cal meal

Recipe Ingredients for Broccoli and Cauliflower Frittata

8 eggs
2 tbsp milk, scrabbled with eggs
2 cups chopped broccoli, cauliflower, carrots, steamed
1/4 onion, minced
2 tsp garlic, minced
1/2 cup low fat cheddar cheese
1/2 tsp margarine

Recipe Directions for Broccoli and Cauliflower Frittata

Scramble eggs and milk. Over medium heat in a skillet, melt margaring in pan. Use a paper towel to wipe out excess margarine...its just to keep the eggs from sticking. Add minced onion, and garlic. Saute until clear. Add veggies, and saute until soft. Add scrambled egg mixture, and using spatula, turn continuously until fluffy. Top with cheese.
