This is a wonderful light and healthy soup that can be eaten and enjoyed all year long!

Recipe Ingredients for Broccoli Cauliflower Cheese Soup

1 1/2 lbs. broccoli
1 1/2 lbs. cauliflower
6 cups water (or more to get consistency you like)
1 tsp. onion salt
1 tsp. garlic powder
4 oz. velveeta (2% milk fat)

Recipe Directions for Broccoli Cauliflower Cheese Soup

  1. Clean and chop broccoli and cauliflower and cook in at least 4 cups of water until tender. Add onion salt and garlic powder to the vegetables while they are cooking. Leave in water and mash down with a potato masher. Cut up 4 oz. Velveeta 2% milkfat processed cheese. Simmer until cheese is thoroughly blended into soup.

  2. Makes approximately 16 cups.
