Recipe Ingredients for Broccoli & Cauliflower au Gratin - VEGAN

2 cups broccoli, chopped
1 cup cauliflower, chopped
2 cups rice milk
1/4 cup olive oil
1/4 cup flour
1/4 cup nutritional yeast flakes
1 tsp salt
1/8 tsp nutmeg
1/8 tsp paprika
1/4 cup almonds, sliced
1/2 cup scallions, chopped

Recipe Directions for Broccoli & Cauliflower au Gratin - VEGAN

  1. Preheat oven to 400F

  2. Steam broccoli and cauliflower, set aside.

  3. Blend rice milk, flour, nutritional yeast flakes, salt, nutmeg, and paprika until smooth.

  4. Place blended ingredients in a saucepan and heat on medium heat until hot and thick (stir often).

  5. Combine sauce and veges in an 8x8" baking dish.

  6. Sprinkle almonds on top.

  7. Bake, uncovered, for 10 minutes.

  8. Top with scallions.
