Ingredients 8 ounces broccoli 1/2 cup egg beaters (or 2 eggs) 10.75 ounces cream of mushroom soup (1 can) 1/2 cup skim milk 1/2 cup kraft fat free mayo 52 grams saltines (20 crackers) 10 ounces kraft fat free shredded cheddar cheese 8 ounces mushrooms 1/2 cup diced onion 2 tbsp. Promise fat free butter spread

Recipe Directions for broccoli casserole

Mix together eggs, soup, and mayo. Add milk, onion, mushrooms, and broccoli. Pour into casserole dish and top with cheese. Bake 1 hour at 350 degrees. Top with saltines (or Ritz crackers) and butter when half done.
