Made it healthier, my daughter didn't notice.

Recipe Ingredients for Broccoli Casserole

16 oz broccoli
1 c brown rice, cooked
1 c cheddar cheese
1/2 c fat free sour cream
1/4 c 1% milk
5 oz cream of mushroom soup, low sodium
2 tbsp water
1 tsp cornstarch
8 oz sliced mushrooms

Recipe Directions for Broccoli Casserole

  1. Preheat oven to 350 degrees.

  2. In sauce pan add 3/4 c of cheese with milk.

  3. Mix water with cornstarch. When cheese melts and starts a low boil add cornstarch mixture. A little at a time until cheese sauce becomes thicker.

  4. Take off burner and add soup & sour cream. Mix.

  5. Spray a casserole dish with cooking spay. Mix broccoli rice and mushrooms. Put in casserole dish.

  6. Pour cheese sauce over and mix.

  7. Sprinkle other 1/4 c cheese over top of casserole.

  8. Bake for 45 to 50 minutes.
