Recipe Ingredients for Broccoli Casserole

1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese
1 cup cooked long-grain rice
1/2 cup sliced mushrooms
1/2 cup diced onion
1/4 cup skim milk
4 teaspoons butter
1/4 teaspoon salt
20 ounce frozen chopped broccoli, thawed
1 cooking spray

Recipe Directions for Broccoli Casserole

  1. Combine the first 7 ingredients in a medium saucepan; cook over low heat 4 minutes or until cheese melts, stirring constantly.

  2. Add the broccoli, and cook 2 minutes or until thoroughly heated, stirring frequently.

  3. Spoon mixture into a 2-quart casserole coated with cooking spray.

  4. Bake at 350 for 30 minutes.
