Broccoli & Carrot Salad is a good source of vitamin A & C. Switch to a regular ranch for a low carb side, but be stingy with the sauce. Remember, the dressing is supposed to enhance the flavor of the veggies.

Recipe Ingredients for Broccoli and Carrot Salad

4 cups Broccoli
1 large Carrots
2 cups Mushrooms
1/2 cup Green Onions
1/4 cup sunflower seeds
1 cup Fat Free Ranch Dressing

Recipe Directions for Broccoli and Carrot Salad

  1. Toss broccoli florets, shredded carrot, sliced mushrooms and sliced onions with dressing; cover. Refrigerate 1 hr or until ready to serve.

  2. Sprinkle with sunflower seeds just before serving. Serve as a chilled salad.
