A light soup with a strong vegetable flavour and the sharpness of blue cheese.

Recipe Ingredients for Broccoli and blue cheese soup

250 g broccoli
1 large courgette
50 g blue cheese
2 cups chicken stock
1/2 cup peas
10 ml worcestershire sauce

Recipe Directions for Broccoli and blue cheese soup

  1. Cut the broccoli into 5cm florets. Remove the ends from the courgette, and cut into 5cm slices.

  2. Bring the stock to a boil and add the vegetables. Simmer uncovered for ten minutes.

  3. Blend the soup and return to the saucepan. Add the crumbled blue cheese and remaining ingredients, with salt and pepper to season. Bring to a boil and allow to simmer until the cheese has melted into the soup.

  4. Serve with crusty bread and crumble a little more blue cheese over the top to garnish.
