Recipe Ingredients for Broccoli-Bacon Salad

1 clove garlic, minced
1/8 cup red onion, chopped
1/2 cup low-fat mayonnaise
1/2 cup reduced-fat sour cream
2 teaspoons cider vinegar
1 teaspoon Truvia
4 cups finely chopped broccoli crowns , (see Tip)
8 ounce sliced water chestnuts, rinsed and chopped
6 strips cooked vegan bacon, crumbled
3 tablespoons dried cranberries
1/4 cup chopped walnuts
1 Freshly ground pepper , to taste

Recipe Directions for Broccoli-Bacon Salad

  1. Steam broccoli for 1 minute in microwave.

  2. Whisk together garlic, mayonnaise, sour cream, vinegar and Truvia.

  3. In a large bowl combine broccoli, onions, water chestnuts, bacon, cranberries, walnuts and pepper.

  4. Pour dressing on top and stir to coat.
