Similar to Ralph's Broccoli Salad in the Service Deli. Can substitute turkey bacon or another type of nut. Really fresh, crunchy salad with a little sweetness from the oranges. Perfect for a BBQ or to accompany any type of meat. Also makes a great snack!

Recipe Ingredients for Broccoli Bacon Salad w/ Mandarins

1/2 cup fat free miracle whip
1 tablespoons Splenda
1 tablespoons cider vinegar
4 cups broccoli, florets
1/2 red onion, diced
10 ounces mandarin oranges
1/4 cup cashews, raw, unsalted
1 ounce bacon, (about 4 strips) diced

Recipe Directions for Broccoli Bacon Salad w/ Mandarins

  1. Mix the dressing first in a medium bowl or storage container.

  2. Add broccoli, onion, bacon and cashews to bowl and toss to combine with dressing.

  3. Top with mandarins.

  4. Cover and chill up until ready to serve.

  5. Serving = 1 cup
