Fresh broccoli in a vegan "cheese" sauce. Excellent side or main dish.

Recipe Ingredients for Broccoli au Gratin - VEGAN

3 cups broccoli, chopped
1 cup yellow squash, chopped
2 cups rice milk
1/4 cup olive oil
1/4 cup flour
1/4 cup nutritional yeast flakes
1 tsp salt
1/8 tsp nutmeg
1/8 tsp paprika
5 oz Monterey Jack
1/2 cup almonds, sliced
1/2 cup scallions, chopped

Recipe Directions for Broccoli au Gratin - VEGAN

  1. Preheat oven to 400F

  2. Steam broccoli/squash (also good with cauliflower instead of squash) and set aside.

  3. In a blender, blend rice milk, flour, nutritional yeast flakes, salt, nutmeg, and paprika until smooth.

  4. Place blended ingredients in a saucepan and heat on medium heat until hot and thick (stir often).

  5. Combine sauce and veges in an 8x8" baking dish.

  6. Sprinkle "cheese" and almonds on top.

  7. Bake, uncovered, for 10 minutes.

  8. Top with scallions.
