Adapted from a Real Simple recipe - quick and tasty! There's enough salt in the feta that you don't need much more, although you can substitute other cheeses and add salt.

Recipe Ingredients for Brit's Red Pepper Crisps

2 pitas
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon oregano
12 ounce roasted red peppers
1 clove garlic
1 teaspoon lemon juice
1 cup feta

Recipe Directions for Brit's Red Pepper Crisps

  1. Split each pita into 2 rounds (4 rounds total). Arrange pitas on a baking sheet, spray lightly with cooking spray, and sprinkle with paprika and oregano. Broil in the oven until crisp.

  2. Heat olive oil in a skillet. Slice the peppers and garlic clove and add to skillet, stirring until hot and fragrant. Add lemon juice and cook 2-3 minutes more.

  3. Top pita halves with red pepper mixture and sprinkle with feta. Broil until cheese melts. Cut into pieces before serving.
