Recipe Ingredients for Brit's Raw Marinated Mushrooms

1/2 cup lemon juice
1 teaspoon lemon zest
1 teaspoon fresh rosemary, chopped
2 garlic cloves, minced
1/4 teaspoon kosher salt
4 tablespoons olive oil
636 g (g g) portabello mushrooms
1 cup corn kernels
1/2 cup raw cashews
1 cup baby spinach

Recipe Directions for Brit's Raw Marinated Mushrooms

  1. Combine first six ingredients and whisk together.

  2. Place mushrooms round side down in a baking dish and pierce with a knife. Drizzle dressing mixture on mushrooms; cover and refrigerate at least 4 hours.

  3. Soak cashews in warm water for 30 min. Puree in a food processor for 30 min. until a paste forms.

  4. Spoon paste into each mushroom cap, topping with corn, spinach, and any remaining dressing.
