Recipe Ingredients for Brit's Ratatouille

1/2 eggplant, diced
2 bell peppers, diced
1/2 onion, diced
14 1/2 ounce diced tomatoes
1 zucchini, diced
2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon cayenne pepper
1 tablespoon olive oil
2 teaspoons garlic, diced

Recipe Directions for Brit's Ratatouille

  1. In a dutch oven, heat olive oil. Add onion and cook until slightly softened.

  2. Add eggplant, peppers, zucchini, and garlic, and cook for about 2-3 minutes. Add tomatoes, salt, pepper and cayenne, and 1/4 cup water and bring to a boil.

  3. If using sausage, nestle sausages into vegetables, cover, and bake at 350 for 30 minutes until sausages are cooked through.
