Recipe Ingredients for Brit's Quick Quinoa Salad

1 cup quinoa
1 leek, sliced into half moons
1 clove garlic, sliced
2 tablespoons pine nuts
3 tablespoons olive oil
4 tablespoons lemon juice
2 tablespoons feta

Recipe Directions for Brit's Quick Quinoa Salad

  1. Cook quinoa according to package directions. Meanwhile, heat 1 tablespoon oil in a small skillet and saute leek and garlic until soft, 5-6 minutes.

  2. Heat oven to 350; toast pine nuts until golden and fragrant, about 10 minutes.

  3. In a medium bowl, toss quinoa with remaining tablespoons olive oil; add leek and garlic and stir to combine. Add lemon juice (to taste; I like mine tangy), pine nuts, and feta and toss.
