Recipe Ingredients for Brit's Bow Tie Beef Skillet

1 lb. ground elk
1/2 tsp. salt
1/8 tsp. pepper
5 oz. bow tie pasta, dry
14 1/2 oz. diced tomatoes, drained
1 1/3 cups beef broth
8 oz tomato sauce
1 tablespoon Worcestershire sauce
3 medium yellow squash, thinly sliced
1 orange bell pepper, chopped
4 oz parmesan cheese, shredded

Recipe Directions for Brit's Bow Tie Beef Skillet

  1. In a large skillet or dutch oven, cook meat over medium heat until no longer pink. Sprinkle with salt and pepper. Stir in the pasta, tomatoes, broth, tomato sauce, and Worcestershire. Bring to a boil. Reduce heat, cover and simmer for 10-12 min.

  2. Add squash and pepper. Cook uncovered 3-4 min. or until pasta and vegetables are tender, stirring occasionally. Add 1/2 the cheese and cook until cheese is melted. Sprinkle with remaining cheese.
