BRINED TURKEY BREAST WITH ROSEMARY-GARLIC BUTTER

Recipe Ingredients for BRINED TURKEY BREAST WITH ROSEMARY-GARLIC BUTTER

5 lbs turkey breast
4 tbs fresh rosemary, chopped
6 garlic cloves, chopped
4 teaspoons ground black pepper
2 teaspoons kosher salt
1 stick butter, softened

Recipe Directions for BRINED TURKEY BREAST WITH ROSEMARY-GARLIC BUTTER

  1. ? 2 quarts cold water

  2. ? 1/2 cup kosher salt

  3. ? 1/2 cup granulated sugar

  4. Place water in a large bowl or plastic container. Whisk in salt and sugar and let sit 5 minutes to dissolve. Add the turkey breast, cover, and let sit in the refrigerator for 45 minutes.

  5. Pre-heat oven to 400F.

  6. Loosen the skin of the turkey breasts by gently working your hand between the skin and the meat. Rub the herb butter under the skin, season the outside with salt and pepper and transfer to a roasting pan fitted with a rack. Drizzle with 2 tablespoons EVOO and transfer to the oven. Roast until deep golden brown and cooked through, 45-50 minutes.
