To serve this soup, place 4 tortilla chips in soup bowl. Add 1/8th of the avocado chunks and 2 teaspoons of sour cream. Ladle soup over top.

Recipe Ingredients for Bright's Tortilla Soup

10 ounces black beans, canned
10 ounces pinto beans, canned
28 ounces tomatoes, diced
3 ounces chicken breast, diced
1 onion, red, medium
1/2 cup fresh cilantro, minced
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon black pepper
1 bell pepper, diced
6 cups chicken broth
1 avocado, diced
40 tortilla chips
16 teaspoons sour cream
1 teaspoon butter

Recipe Directions for Bright's Tortilla Soup

  1. Over medium heat, melt butter in soup pan.

  2. Chop onion and add to pan.

  3. Add diced chicken to pan.

  4. Cook until onion is translucent.

  5. Add green peppers and stir.

  6. When green peppers are brighter green, add canned tomatoes and chicken broth.

  7. Drain and rinse black and pinto beans, add to pan.

  8. Add 1/2 of cilantro, and all of cumin, chili powder, and black pepper.

  9. Simmer slowly for 1/2 hour. Using potato masher, mash beans in soup.

  10. Check for seasoning and adjust to your taste.

  11. Add second half of cilantro.

  12. Simmer 5 minutes more and serve as described above.
