Really good on a cold day, but light enough for supper. The leek's very delicate onion flavor is delicious.

Recipe Ingredients for Bright's Potato and Leek Soup

2 leeks, large, chopped
1 tablespoon butter
8 cups chicken broth
1 small carrot, diced
2 red potatoes, with skins, scrubbed and diced
1 1/2 teaspoons black pepper
1/4 teaspoon thyme leaves
4 tablespoons butter
1/3 cup flour
1 1/2 cups half and half

Recipe Directions for Bright's Potato and Leek Soup

  1. In a large soup pan, saute leeks and carrot in butter.

  2. Add chicken broth, red potatoes, black pepper, and thyme.

  3. Simmer gently until potatoes are tender. Reduce heat.

  4. Over medium heat, in a separate pan, melt butter and mix in flour for a roux paste. When mixture begins to smooth out, add half and half and stir until it begins to thicken.

  5. Remove white sauce from heat and whisk into soup, stirring until smooth.

  6. Serve with sandwiches or bread if you like.
