Recipe Ingredients for Bright Sunny Black Bean Salad

1 cup Black Beans
1/2 cup slices Cucumber
1 cup Diced Tomatoes with Green Pepper and Onion
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 fruit without skin and seeds Avocados
3 cup Spinach
60 grams 100% Lime Juice
1 tbsp Pepper, Black
3/4 tbsp Salt, Table
2 1/2 grams Southwest Chipotle Salt-Free Seasoning Blend
7 grams Dry Roasted Lightly Salted Peanuts

Recipe Directions for Bright Sunny Black Bean Salad

  1. Mix together 1 can drained black beans, 1/2 cucumber chopped, chopped avocado, chopped onions, and 1 can diced tomatoes.

  2. In separate bowl, mix lime juice and spices.

  3. Toss veggie mix with lime dressing and toss with spinach. Sprinkle peanuts on top.
