A rich pasta sauce featuring brie and parmigano romano with tempeh, spianch, and mushrooms. A savory and delicate lemon flavor are the perfect pairings for excellent pasta.

Recipe Ingredients for Brie and Parmigano Pasta Sauce with Tempeh and Spinach

8 oz grain tempeh
1 tsp extra virgin olive oil
3 cloves garlic
1/2 cup chopped onion
1 1/2 cup raw mushrooms
1 cup frozen cut leaf spinach
2 tsp sweet basil, dried
1/2 tsp rosemary, dried
1/2 tsp thyme
1/2 tsp sage
2 tbsp ICBINB light spread
1 oz romano parmigano
1 oz brie cheese
2 tbsp whole wheat flour
3/4 cup milk
2 tbsp fat free sour cream
1 tsp cardamom seed
1/2 tbsp lemon zest
1/4 tsp cayenne

Recipe Directions for Brie and Parmigano Pasta Sauce with Tempeh and Spinach

  1. Heat olive oil on medium heat. Mince garlic and add to oil.

  2. Add chopped onions. Lightly chop mushrooms and add with spinach.

  3. Crumble tempeh to approximately 1 inch peices and add to veggies.

  4. Add basil, rosemary, thyme, and sage to veggies, stirring frequently.

  5. Contine stirring on medium heat until browned and cooked through, then turn down to low heat.

  6. Meanwhile, melt ICBINB in small saucepan.

  7. When melted, add grated romano parmigano and chopped brie with the flour.

  8. Stir until well melted and dissolved on high heat.

  9. Slowly add milk 1/4 cup at a time while stirring.

  10. Turn down the heat and add lemon zest and cayenne.

  11. Add cardamom seed and remove from heat.

  12. Pour over veggie mixture and stir until well combined.

  13. Serve over shaped pasta, such as ziti.
