An unusual and suprisingly great combination of Brie and Mango in a tortilla. Elegant yet fun.

Recipe Ingredients for Brie and Mango Quesadillas

4 oz brie cheese
1 mango
1/2 cup onion chopped
4 hemp tortillas
1 tsp extra virgin olive oil

Recipe Directions for Brie and Mango Quesadillas

  1. Thinly slince brie without removing paper outside.

  2. Chop mango expluding pit and skin.

  3. Place onion and mango in food processor and process until slightly chunky.

  4. Heat large pan on medium heat.

  5. Rub 1/4 tsp of oil on tortilla and place in warm pan.

  6. Add 1/4 of the mango mixture and 1 oz of sliced Brie.

  7. When outside is starting to brown and cheese mixture is melting, fold in half and continue to cook until completely golden brown and melted on the inside.

  8. Finish the other tortillas the same way.

  9. Serve immediately with sour cream and cilantro.
