Recipe Ingredients for Brian's blueberry-rhubarb crunch

4 cups rhubarb, diced
4 cups blueberries
1/2 cup sugar
4 tbs flour
1 tbs butter
1/2 cup flour
1 cup rolled oats
1/2 cup brown sugar
8 tbs butter
1 tsp cinnamon
1 dash salt

Recipe Directions for Brian's blueberry-rhubarb crunch

  1. Gently mix blueberries and rhubarb in large bowl. Mix 1/2 cup sugar and 4 tbs of flour and pour over berry mix. Toss gently to coat and let sit for 15 minutes.

  2. Mix 1/2 cup flour with oats, succanat, cinnamon and dash of salt and cut in 8 tbs of butter to make crumbs.

  3. Spray 9x13 baking dish with cooking spray and layer bottom of pan with 1/2 cup of crumbs. Spoon berry mix evenly over pan and evenly distribute any extra flour mixture. Dot with last tbs of butter. Cover with remaining crumbs.

  4. Bake at 350 degrees until fruit is bubbling and crumbs are browned; approximately 40 minutes.
