Recipe Ingredients for Brenda's Vegetable Pie

2 pie crusts
1/2 cup olive oil
16 oz. Part-skim Mozzarella cheese, shredded
1 eggplant, peeled, thinly sliced & quartered
1 green pepper, thinly sliced
1 zucchini, thinly sliced
1 large onion, thinly sliced
2 tomatoes, cut in eighths
2 cloves of garlic, minced
1/2 cup Parmesan cheese
3/4 tablespoons oregano
3/4 teaspoons basil
1/2 teaspoon salt
1 tablespoons milk

Recipe Directions for Brenda's Vegetable Pie

  1. Heat cups oil, add eggplant, toss to coat, cook 5-8 minutes. Add remaining oil, onion, green pepper, garlic, and zucchini; cook 5 minutes.

  2. Combine spices in a cup.

  3. Prepare crust in pie pan, sprinkle with cup parmesan cheese. Add of vegetable mixture and top with tomatoes, of the spices and 1 cup shredded mozzarella. Add second half of vegetable mixture, then spices, then the rest of the mozzarella. Top with piecrust, brush with milk and sprinkle with c. parmesan cheese.

  4. Bake at 425 degrees for 25 minutes.
