quick meal, not too bad if you use low fat stock

Recipe Ingredients for brenda's chicken and rice

1 tbsp olive oil
8 ounces chicken breast
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrot, chopped
1/3 cup bell pepper, chopped
1 cup white rice, long grain
2 cup chicken stock, low fat
1/2 cup water

Recipe Directions for brenda's chicken and rice

  1. brown chicken breast in olive oil

  2. add vegetables and cook until tender

  3. add stock and water

  4. bring to a boil

  5. add rice and bring back to a boil

  6. cover and simmer for 15-20 minutes

  7. fluff with a fork and serve
