Breast of Chicken in Rice Casserole Recipe

One of my mom's recipes - and a favorite! I usually serve with a veggie side like asparagus, broccoli or a salad.

Recipe Ingredients for Breast of Chicken in Rice casserole

1/2 lb chicken breast, about 2, sliced in half
10 oz Condensed Soup
10 oz Silk light, one soup can
1/4 cup mushrooms, diced (Optional)
1 cup brown rice, instant
1 packet Onion Soup Mix

Recipe Directions for Breast of Chicken in Rice casserole

  1. Preheat oven to 350 degrees.

  2. In medium bowl, mix the Cream of Mushroom Soup (98% Fat Free) and one soup can of milk. (Use the mushroom soup can!) Reserve 1/2 cup of the mixture.

  3. In the remaining mixture, add half of one packet of Lipton Onion Soup Mix (Knorr French Onion works too) reserving the rest to sprinkle on top.

  4. Add the rice, and mushrooms (optional). Mix well.

  5. Pour rice/soup mixture into baking dish.

  6. Arrange chicken in mixture.

  7. Pour the reserved 1/2 cup milk/soup mix over all, do not mix in.

  8. Sprinkle any remaining onion soup mix over the top.

  9. Cover lightly and bake for 1 hour. (Sometimes it overflows, so it's best to put a cookie sheet or foil under the dish.)

  10. Uncover and bake about 15 minutes or until most liquid is absorbed.

  11. Serve with a veggie side or alone.
