Butternut squash is super-rich in betacarotene, which has powerful antioxidant properties, helping protect against heart disease and cancer. The potatoes provide complex carbohydrates, fibre and vitamin C. Chicken is rich in protein and B-vitamins.

Recipe Ingredients for Breast of Chicken with Butternut Squash Mash

4 chicken breast, on bone
1 tbsp extra virgin olive oil
4 medium potatoes
2 c butternut squash (1 whole)
6 tbsp skim milk
1/2 tsp salt
1/2 tsp pepper
2 tbsp parsley, flat-leaf, chopped

Recipe Directions for Breast of Chicken with Butternut Squash Mash

  1. Heat the oven to 375F.

  2. Scrub and prick the potatoes and cook in the oven for 45-60 minutes, depending on the size of the potatoes.

  3. Meanwhile, place the chicken breasts in a roasting tin, drizzle over a little olive oil, and toss until well coated.

  4. Cook the chicken and the squash in the oven for 20-30 minutes, depending on the size of the chicken breasts. The squash should be soft but not mushy.

  5. Halve the potatoes and scoop out the flesh into a bowl. Add the cooked squash and milk, season with the salt and pepper and mash until smooth. Adjust the consistency with a little extra milk if you wish.

  6. Divide the mash between four plates and place a chicken breast on top. Scatter over the chopped flat-leaf parsley and serve immediately.
