Large, flat pancakes good for filling with fruit or spreading with peanut butter and your favorite pancake topping. See Baked Apple Wraps for a good breakfast idea.

Recipe Ingredients for Breakfast Wraps

1 1/2 c oat flour
1/2 c whole wheat flour
1/2 c white flour
1/2 t salt
1/4 c cashews, raw
1 banana, ripe
3 c water
1 t vanilla flavoring

Recipe Directions for Breakfast Wraps

  1. Mix first 4 ingredients in medium bowl.

  2. Blend cashews, banana, vanilla and 1 cup of water until smooth.

  3. Add remaining 2 cups of water and mix well.

  4. Add blender mixture to dry ingredients and stir till well mixed.

  5. Batter should be thin. Add more water if needed.

  6. Pour 1/3-1/2 c of batter onto hot nonstick skillet.

  7. Cook until top is dry and flip over to brown the other side.

  8. Repeat with the remaining batter.
