Recipe Ingredients for Breakfast Veggie Tacos

2 cups of zucchini
1/3 avocado
1/2 cup of refried beans
1 1/2 cup bell peppers
1/4 cup of mild salsa
2 eggs
3 flour tortillas
1/8 cup of onions
1/8 cup tomatoes

Recipe Directions for Breakfast Veggie Tacos

  1. sautee all veggies(zucchini, onion, tomatoes, and bell peppers) in frying pan sprayed with non-stick spray.

  2. After onions a clear, add two eggs to the mixture and stir.

  3. Warm tortillas in oven at 250 degrees

  4. Remove mixture from heat

  5. Fill tortillas with mixture and add avacado and salsa to top

  6. Enjoy!
