Recipe Ingredients for Breakfast Veggie Scramble

2 medium raw Carrots
1 medium raw Sweet Potato
1 small raw Red Potato
2 cups sliced fresh Mushrooms
1 cup chopped raw Onion
1 cup chopped Peppers
2 cups chopped Zucchini
1 cup chopped Spinach
8 slices turkey bacon
4 large eggs
1 cup shreaded cheddar cheese

Recipe Directions for Breakfast Veggie Scramble

  1. To save time, chop up many servings and freeze as single servings. Then, all you have to do for prep is cook the frozen pack and add an egg at the end. Quick & easy!

  2. Single serve frozen packets include: chopped veggies & turkey bacon. Add an egg (or egg whites) at the end and sprinkle with cheese. Adjust recipe as desired based on preferred veggies.

  3. Cooking instructions: Heat skillet, spray with non-stick or lightly mist with oil. Empty contents of frozen single serve packet (veggies & meat) into the skillet and cook. Use cooking spray. (Optional: lightly mist with olive oil OR add 1/4 cup of orange juice for a tangy sweet taste). Once veggies are cooked to desired level, move to one side of the pan and cook 1 egg (substitute with egg whites if desired) then mix well with veggies, turn off burner and sprinkle with 1/4 cup of shreaded cheese. Serve & enjoy!
