A simple breakfast scramble. Really any veggies will do.

Recipe Ingredients for Breakfast Veggie Scramble

1/2 teaspoon olive oil
1 teaspoon garlic, minced
1/4 cup green pepper, diced
1/4 cup crimini mushroom, sliced
1/8 cup baby spinach, chopped
1/2 ounce cheddar cheese, shredded
1 egg, organic, scrambled

Recipe Directions for Breakfast Veggie Scramble

  1. Heat olive oil in non-stick skillet. Saute garlic, green pepper and mushrooms until soft and beginning to crisp.

  2. Add spinach and allow to wilt.

  3. In the meantime shred cheese into a small bowl, crack in egg and scramble.

  4. Add egg mixture to skillet and scramble with veggies until firm. Enjoy!
