Recipe Ingredients for Breakfast Veggie Patty

1.67 cup, cubes Sweetpotato
1 1/2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 1/2 cup potato
4 large Egg, White
1/2 cup Whole Wheat Flour
1 tbsp Vegetable Oil, Canola

Recipe Directions for Breakfast Veggie Patty

  1. Grate Sweet Potato, Potato and Zucchini

  2. Mix together and pat with a paper towel to absorb moisture

  3. Add Egg White and Whole Wheat Flour

  4. Season to taste with Salt, Pepper and Nutmeg

  5. Form into a patty and cook with canola oil over medium heat, until browned on each side
