10 oz. frozen spinach
3/4 c. egg beaters
3/4 c. cheddar cheese
1/4 cup green bell peppers
1/4 c diced onions

Recipe Directions for Breakfast, Vegetable Quiche Cups To Go

  1. Microwave the spinach for 2-1/2 minutes on high

  2. Drain excess liquid

  3. Line a 12 cup muffin pan with foil baking cups.

  4. Spray cups with cooking spray

  5. Combine egg substitute, cheese, peppers, onions, and spinch in a bowl.

  6. mix well.

  7. Divide evenly among the muffin cups.

  8. Bake at 350F for 20 minutes, until a knife inserted into the center comes out clean.
