Sautéd veggies, chicken and eggs with corn tortillas

Recipe Ingredients for Breakfast Tacos

3 Eggs
1 serving bell pepper red
2 Shallots
1 cup Broccoli
1 tbs Olive Oil
3 clove Garlic
3 tortillas White Corn Tortillas 80 Count
1 cup Rotisserie Chicken

Recipe Directions for Breakfast Tacos

  1. Start by chopping veggies and chicken and set them aside. Leave the eggs out at room temperature while sautéing.

  2. In a large skillet, heat olive oil on medium?high.

  3. Add veggies from hard to soft, starting with the bell peppers.

  4. After about a minute, or once the bell peppers start to soften, add the broccoli.

  5. This is a good point to salt and pepper to taste.

  6. After about 1?2 minutes, add the shallots and chicken.

  7. Adding water periodically to the pan will prevent items from burning, and redistribute nutrients and flavor evenly.

  8. Once the shallots hit the pan, head a separate skillet on medium heat for the eggs.

  9. Crack, and beat the eggs.

  10. Once hot, add the eggs to the separate skillet.

  11. Using a spatula, rake the cooked eggs from the bottom of the pan. (use the spatula upside down, so the shovel points to the pan, and push the eggs away from you)

  12. Salt and pepper once the eggs are mostly cooked and just a bit gelatinous.

  13. Add eggs to veggies and chicken along with the garlic.

  14. GARLIC BURNS VERY EASILY, so mind the pan and toss frequently.

  15. Heat corn tortillas in a griddle, or bare on the burner if you wish.

  16. Serve once tortillas are cooked and make your self some tacos!
