3 Breakfast Tacos w/ Low Cholesterol

Recipe Ingredients for breakfast tacos

0.5 serving Extra Virgin Olive Oil
1 cup chopped raw Yukon Gold Potatoes
1 eggs Egg, Scrambled
0.5 cup 100% Liquid Egg Whites
3 serving Flour Tortillas
0.5 serving Honey Sliced Deli Ham

Recipe Directions for breakfast tacos

Crisp chopped potatoes in oil 15 minutes tossing occasionally, remove potatoes onto paper towels to drain, add chopped ham to pan, cook a few minutes and add scrambled egg and egg whites, cook until eggs are firm. Meanwhile heat tortillas. Add potatoes back to pan to slightly reheat 1 minute. Spoon potato, egg, and ham mixture evenly onto tortillas.
