Recipe Ingredients for Breakfast Tacos

2 tortillas 6" White Corn Tortillas 30ct
0.5 serving VIGO EXTRA VIRGIN OLIVE OIL
30 grams Tomatoes
2 tbsp chopped Onions
30 grams Black Beans, Organic
1 large Egg, Whole

Recipe Directions for Breakfast Tacos

  1. Preheat 1 tsp of olive oil in a sauté pan over medium-low heat.

  2. Sauté 2 tbsp of chopped onions until softened, about 2-3 minutes.

  3. Add 2 tbsp of tomatoes and 2 tbsp of black beans to pan and sauté another 2 minutes.

  4. Add beatened egg to the pan and stir continuously until cooked through.

  5. Season eggs with pepper to tase.

  6. Spoon half of the eggs in each tortilla and top with diced avocado.
