Low-Fat breakfast taco with spinach.

Recipe Ingredients for Breakfast Taco

2 tsp olive oil
1/2 sweet onion, diced
1/4 c frozen chopped spinach
1/4 tsp salt
3/4 c Egg Beaters
2 oz. cheddar cheese, grated
48 g (2) 6" whole wheat tortillas

Recipe Directions for Breakfast Taco

  1. Heat oil over medium-high heat.

  2. Add onions. Saute for 2 - 3 minutes.

  3. Add spinach and salt. Saute for about 3 minutes.

  4. On a separate burner, heat a medium skillet or griddle on medium heat.

  5. Add Egg Beaters to the pan and, after about 5 seconds or so, start to move the eggs and veggies around with a spatula until eggs are just about set. Remove from heat and continue to move the eggs around until completely set (this will ensure your eggs do not over cook).

  6. Sprinkle cheese over eggs and allow to sit until cheese starts to melt.

  7. While cheese is melting, heat tortillas up, one at a time, on heated skillet or griddle, flipping after about 30 seconds.

  8. Divide heated tortillas between 2 plates and split the eggs & veggies between the two; serve immediately.

  9. Option - this is really good with salsa, Chalula, Tobasco, or salsa verde, all of which are fat-free foods!
