Recipe Ingredients for Breakfast Taco

2 flour tortillas
1/2 cup egg white
1/2 cup egg substitute
1 cup baby spinach
2 tablespoons diced red pepper
1/2 teaspoon crushed red pepper
1 ounces cheddar cheese

Recipe Directions for Breakfast Taco

  1. Bring skillet to medium heat. Add spinach and red pepper and cook until spinach starts to wilt - about 4 minutes. Add crushed red pepper, egg white, egg substitute and cook until eggs are done - about 4 minutes.

  2. Heat up flour tortilla in microwave - split between two tortillas and sprinkle each with 1/2 ounce cheddar cheese.

  3. Add salsa.

  4. Serve with fresh fruit on the side.
