Eggs and cheddar cheese in a warm flour tortilla.

Recipe Ingredients for Breakfast taco

2 flour tortilla
3 eggs
1 oz cheddar cheese

Recipe Directions for Breakfast taco

  1. Scramble eggs, salt to taste. Cook to desired doneness in small saute pan with nonstick spray.

  2. Place cheese on two tortillas and heat in microwave 10 seconds, until cheese is melted. (You can also heat in separate saute pan to avoid an over-chewy tortilla.)

  3. Add eggs to tortillas and cheese.

  4. Serve with hot sauce or salsa, if desired.
