Breakfast casserole, can be made ahead

Recipe Ingredients for Breakfast strata

8 large eggs
1 1/2 cups fat free milk
1/2 cup sharp cheddar cheese, grated
1/4 cup parmesan cheese, grated
4 slices turkey bacon, crumbled
1 cup onion, chopped
1 cup mushrooms, chopped
1 cup broccoli, raw, chopped
1 tsp dried mustard

Recipe Directions for Breakfast strata

  1. Spray 13 x 9 baking dish with non-stick cooking spray. Sprinkle the bacon, onions, broccoli and mushrooms over the bread.

  2. Sprinkle half the cheddar cheese over top.

  3. Mix together eggs, milk, and dry mustard.

  4. Pour egg mixture over all, then sprinkle with remaining cheddar and parmesan cheese.

  5. Bake at 350 for 45-60 minutes until firm and light golden brown.

  6. This works well with any type of breakfast meat and low-fat cheese. I do not use any salt but do add a little pepper to the egg mixture.
