Like spinach quiche, but without the crust

Recipe Ingredients for Breakfast Spinach fritatta Scramble

4 eggs
2 c spinach
1/2 onion, chopped
1 green onion
1/4 cup shredded cheddar cheese
1/4 cup chopped red pepper
1 cooking spray

Recipe Directions for Breakfast Spinach fritatta Scramble

Spray saute pan with cooking spray. Saute chopped onion and peppers to desired tenderness. Add spinach and put a lid on it till spinach wilts. Then add beaten eggs and and scramble. When eggs are almost set, sprinkle with grated cheese and chopped green onion on top and put a lid on it. Turn to low and let the cheese melt, then serve.
