Recipe Ingredients for Breakfast Scramble

2 large eggs, raw
1 medium potato, chopped
1 jalapeno pepper, diced
1 tbsp extra virgin olive oil
1/2 large onion, diced
1/4 cup salsa

Recipe Directions for Breakfast Scramble

Heat a skillet with olive oil. Dice and/or chop the potato, jalapeno pepper and onion and sautee in the skillet on high until all browned, lower heat and cover for 10 minutes. Scramble the eggs in seperate bowl and pour over potato mixture. When eggs begin to harden, cover all with fresh salsa and remove from heat.
